It’s a known and appreciated fact that Rum’s versatility goes beyond cocktails. It makes for a fantastic ingredient in the pantry. And if you haven’t tried it out yet, you’re missing out big time.

Take this as your sign to introduce some WISE ingredients in your dishes and treat that sweet-toothed Rum lover in you.

Rum-Raisin Ice Cream
You can never really go wrong with Rum and Raisins. An ice-cream version of it is just perfection. With the flavourful rum raisins adding a kick when folded into creamy vanilla, this’ll be your new go-to rummy treat.
Ingredients:
- 1/2 cup raisins
- 1/4 cup Wise Monkey Cafe rum
Vanilla Ice Cream (from scratch) - 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 5 large egg yolks
Instructions:
- Soak the raisins in rum for at least an hour. Let it rest, because everyone’s got to rest once in a while.
- In a saucepan, heat the cream, milk, and half of the sugar over medium heat until it just begins to simmer.
- In a bowl, whisk the egg yolks with the remaining sugar until pale and thick.
- Slowly pour the warm cream mixture into the egg yolks, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens.
- Remove from heat and stir in the vanilla extract. Strain the mixture into a bowl and let it cool.
- Once cooled, pour into an ice cream maker and churn according to however the machine instructs you to.
- Fold in the rum-soaked raisins before transferring the ice cream to a container.
- Freeze for at least 2 hours and then enjoy!
OR
To make life easier, you could just buy your favourite Vanilla Ice-cream from the store and fold in some rum raisins in it. It’s equally enjoyable.
