Wise Monkey in the Kitchen: Grilled Chicken with Mango Pineapple Salsa

An ingredient’s been missing from your kitchen for way too long and we’d like to set that right. Presenting to you – Wise Monkey Rum, for anyone who’s ever thought “There’s very little Rum in this food”.

In our series of #WiseMonkeyInTheKitchen, we explore rum recipes that you can wind up to at the comfort of your home. These recipes also make for some great conversation starters at a party.

So, choose your vibe and cook up with Wise Monkey Rum.

For our first recipe, the Wise Monkey has grilled up a delicious Spiced Rum-marinated Chicken with tropical flavours of a mango-pineapple Salsa!

Ingredients:

For the Grilled Chicken

  • 2 Chicken breasts
  • 
Salt and Black pepper (as per taste) 

  • 4 Garlic cloves crushed 

  • 1/2-1 Lime juiced 

  • 2 tbsp Coriander 

  • 4 tbsp Spiced rum
For the Salsa
  • 1/2 red bell pepper diced 

  • 1/2 yellow bell pepper diced 

  • 1/2 onion diced 

  • 2-3 slices pineapple diced
  • 1 mango diced
For the Dressing
  • 2 tbsp extra virgin olive oil
  • 1/2 lime juice
  • 2-3 tbsp green coriander
  • Salt and Pepper (as per taste)
Method
  • Marinate the chicken with all the mentioned ingredients and set it aside overnight (or at least for 2 hours)
  • Grill the chicken on both sides using a generous amount of extra virgin olive oil
  • Stir together all the salad ingredients with the dressing.
  • Serve the grilled chicken with desired portion of mango-pineapple salsa.
