Wise Monkey in The Kitchen: Café Rum Mousse

Café Rum Mousse

If you’re looking for a melt-in-the-mouth dessert to immediately fall in love with, Rum Mousse is it. Creamy, smooth, rum dessert that’d take fewer than 5 ingredients and comes together easily. Give it a go and thank us later!


Ingredients:

  • 1 cup heavy cream (FULL FAT, now low or whipped)
  • 1/2 cup Café Rum
  • 4 oz dark chocolate, chopped
  • 2 large egg yolks
  • 1/4 cup sugar
  • Whipped cream and chocolate shavings for garnish (or just pour in a tbsp more of rum and call it garnish)

Method:

  1. In a saucepan, heat Cafe rum until it simmers, then add chopped chocolate and stir until melted.
  2. Whisk egg yolks and sugar in a separate bowl until pale. Slowly add the chocolate mixture, stirring constantly.
  3. Whip the heavy cream until soft peaks form. Gently fold it into the chocolate mixture until fully combined.
  4. Fill up the serving glasses and chill for 2 hours.
  5. Garnish with whipped cream and chocolate shavings before serving.
