Wise Monkey in The Kitchen: Café-Choco Truffles

It’s a known and appreciated fact that Rum’s versatility goes beyond cocktails. It makes for a fantastic ingredient in the pantry. And if you haven’t tried it out yet, you’re missing out big time.

Take this as your sign to introduce some WISE ingredients in your dishes and treat that sweet-toothed Rum lover in you.

Café-Choco Truffles

For the chocolate lovers, rum-infused truffles are a must-try. These decadent treats are made by blending rich dark chocolate with a splash of Cafe rum. The rum enhances the chocolate’s natural depth, and makes for the perfect gift – whether its to someone else or to yourself.

Bonus point is that it’s an easy dessert that can be made with a microwave and a refrigerator. It’s a treat in all senses for those who hate cooking in pans and having to wash them later on.


Ingredients:

  • 8-10 oz dark chocolate (chop it up like you’ve got issues with the chocolate)
  • 1/2 cup heavy cream (FULL FAT, not low or whipped)
  • 30g (2tbsp) unsalted butter
  • 3-4 tbsp Cafe Rum (or spill how much ever you like)
  • Cocoa powder or melted chocolate (for coating)

Method:

  1. Microwave chocolate, cream, and butter in a microwave proof bowl. Microwave it on high for about 4 x 30 second bursts while stirring in between.
  2. The chocolate would’ve melted smooth (this is the ganache). Add in the Café Rum and place this mixture in the refrigerator for 6 hours (no shortcut in regards to this. Wait 6 hours)
  3. Once firm, roll out the truffle balls onto a tray.
  4. Coat them up in cocoa powder or melted chocolate and chill it again before serving.
