An ingredient’s been missing from your kitchen for way too long and we’d like to set that right. Presenting to you – Wise Monkey Rum, for anyone who’s ever thought “There’s very little Rum in this food”.
In our series of #WiseMonkeyInTheKitchen, we explore rum recipes that you can wind up to at the comfort of your home. These recipes also make for some great conversation starters at a party.
So, choose your vibe and cook up with Wise Monkey Rum.
For our first recipe, the Wise Monkey has grilled up a delicious Spiced Rum-marinated Chicken with tropical flavours of a mango-pineapple Salsa!

Ingredients:
For the Grilled Chicken
- 2 Chicken breasts
- Salt and Black pepper (as per taste)
- 4 Garlic cloves crushed
- 1/2-1 Lime juiced
- 2 tbsp Coriander
- 4 tbsp Spiced rum
For the Salsa
- 1/2 red bell pepper diced
- 1/2 yellow bell pepper diced
- 1/2 onion diced
- 2-3 slices pineapple diced
- 1 mango diced
For the Dressing
- 2 tbsp extra virgin olive oil
- 1/2 lime juice
- 2-3 tbsp green coriander
- Salt and Pepper (as per taste)
Method
- Marinate the chicken with all the mentioned ingredients and set it aside overnight (or at least for 2 hours)
- Grill the chicken on both sides using a generous amount of extra virgin olive oil
- Stir together all the salad ingredients with the dressing.
- Serve the grilled chicken with desired portion of mango-pineapple salsa.
